the clunky hardwarey feel of them was important imo.
these werent mass produced weapons they were handcrafted items that each Jedi would construct and tune to their own needs.
thats why Luke losing his father's and constructing his own was such a key part of him becoming a Jedi

I think the only reason the dark saber looks more like a sword is because it was built by a mandalorian who was soldier before joining the order. he was used to fighting with vibroblades aka swords.

And on top of that, the actual ‘blade’ doesn’t have any weight to it, which would make the issue of where you put your hand less of a problem since you have to worry less about keeping the weight balanced

i feel like the Dark saber gets a pass as it IS supposed to look like a sword hilt as it was made by a mandalorian, thus a brutalist and martial focused design rather than a weapon from "a more civilized time" i.e. nothing thats too combat focused but supposed to represent a weapon of peace and civilization not war and martial prowess. It also leans into the fact that Jedi Lightsabers may even be somewhat uncomfortable for anyone other than the person who made it or that maybe even a force user or someone with a jedi mindset is needed to weild the lightsaber effectively.

I feel both takes for the first one could be explained lore wise. for Luke's grip, he doesn't know how to use it properly, but like you said as the choreography amps up he learns how to hold it properly. For Anakins grip, he has a metal hand so comfort isn't really a priority for him, and as such his grip can be different.

I think they’re held like that because they’re supposed to be weightless and you don’t have to have good edge alignment so it makes more sense to hold it in a way that gives you the most range unless you’re fighting somebody with another saber then it actually matters how structured your blocks and strikes are
