This recipe makes one 9x13 pan but could EASILY be doubled or tripled if needed to feed a large party.  
Sauce:
Two cans green chili enchilada sauce
1.5 cans water
Garlic powder
Jalapeño seasoning 
Chili powder
1-Onion 
3-Poblano
2-Jalapeños
Filling:
3 chicken breasts (shredded) 
1 block cream cheese
1- Bag shredded cheese
Extra ingredients:
Cilantro 
Carb balance tortillas 
1 jar of white queso (or make your own)
1 Bag Shredded cheese 
Directions: 
In a large pot on the stove (or instant pot/crockpot) 2 combine green chili sauce, 2 cans of water, seasonings and raw chicken breasts. Let simmer, covered until chicken is fully cooked and tender. Add in veggies and let cook until they’re tender as well and turn off. 
Remove chicken and place a separate bowl, with 1 block of softened cream cheese and garlic powder. Use hand mixer and shred chicken/combine with cream cheese. 
Use a a slotted spoon to pull most the veggies from the left over sauce and add to chicken mixture, fold these in. Don’t mix with mixer or it’ll be mushy. Once combined, fold in shredded cheese. 
Use carb balance tortillas (or whatever you prefer) and scoop chicken mixture into each tortilla and roll. 
Place rolled enchiladas in baking dish and bake at 350 for 10 min until tops of tortillas are crispy, then pull them out to finish assembly. This step is important bc it keeps your tortillas from getting soggy in the sauce and gets them crispy first. 
Top with 1 jar of white queso (whatever brand you like or make your own) then top with some of your left over green chili sauce and top generously with shredded cheese. 
Bake at 350 until very bubbly, then switch to HI BROIL until cheese is starting to get crispy and brown on top. 
Let cool and top with cilantro, Jalapeno, avocado, sour cream etc. whatever you want! 
Enjoy!
