That’s Mexican horchata. Spanish horchata is made with tiger nuts and it’s sooo much better

If making it ice cream - I would do half the horchata and half sweetened or unsweetened condensed milk or heavy cream

I've never seen anyone toast the rice for it. I might have to try it but horchata is so good. most Mexican restaurants have it for those that want to try it without making it

I really like the idea of horchata ice cream though. Freezing mutes spices,. Maybe adding more cinnamon would help.

one day, I was just frolicking through my local farmers market, it was a hot summer afternoon, the thermometer read 90efin8°f, when up ahead in the distance I saw a small stall selling "aguas frescas, so I ran, then I saw something I've never seen "pumpkin spice horchata" as a Mexican I went "ay dios mio" but I dared to try it, ended up buying all they had left of it.
