80/20 is way to much fat. I am always disappointed when I buy it , I have to drain out the fat several times to get it to brown and not boil.

I actually do 70/30 for most meat meals. Mainly due to cost and more flexible in terms of taste. I'm probably committing a good crime, but I've cooked near in the microwave and it's been very moist the whole time and still fully cooked.

I don’t buy any of that pre-ground beef. It’s nasty and you don’t know what’s in it. I grind my own chuck roast or bottom round and whatever the percentages I don’t care.
