BUTTERNUT SQUASH CANNELLONI 🍁  1.	Roast the Butternut Squash: 	•	Preheat your oven to 400°F (200°C). 	•	Cut the butternut squash in half lengthwise and scoop out the seeds. 	•	Place the halves on a baking tray, cut side up. Drizzle with olive oil, season with salt, pepper, and a few sage leaves. 	•	Roast for 45 minutes or until the flesh is tender. Make the Butternut Squash Béchamel: 	•	In a saucepan, melt 65g of butter over medium heat. 	•	Add 65g of flour and whisk continuously for 1-2 minutes to form a roux. 	•	Gradually add 1 liter of milk while whisking until the mixture thickens to a creamy consistency. 	•	Stir in 1 cup of butternut squash purée and season with nutmeg, salt, and pepper. Set aside. 	4.	Assemble the Cannelloni: 	•	Lay out the precooked lasagna sheets and spoon a portion of the filling along one end of each sheet. Roll up to form cannelloni. 	•	Spread a layer of the butternut squash béchamel sauce on the bottom of a baking dish. 	•	Place the cannelloni seam-side down in the dish. 	•	Cover with more béchamel sauce and sprinkle generously with parmesan and provolone cheese. 	5.	Bake: 	•	Preheat the oven to 375°F (190°C). 	•	Bake the assembled cannelloni for 25-30 minutes or until golden and bubbly on top. 	6.
