@joinrick: Greek-Style Chicken Gyros with Homemade Tzatziki Ingredients: For the Chicken: 2 boneless, skinless chicken breasts 2 tbsp olive oil 1 tbsp lemon juice 2 cloves garlic, minced 1 tsp dried oregano Salt and pepper to taste For the Tzatziki: 1 cup Greek yogurt 1/2 cucumber, grated and drained 1 tbsp lemon juice 1 clove garlic, minced 1 tbsp fresh dill, chopped Salt and pepper to taste For the Gyros: 4 pita or flatbreads Sliced tomatoes, onions, and lettuce for garnish Preparation: For the chicken, combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken and marinate for 30 minutes. For the tzatziki, mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper in a bowl. Chill. Grill or cook chicken in a skillet for 6-7 minutes per side until fully cooked. Slice thinly. Warm pita or flatbreads and fill with sliced chicken, fresh veggies, and tzatziki sauce. Serve and enjoy!
