Fakeaway Fridays ep 9: Honey Chicken & Fried Rice <3 Recipe (serves 2): Chicken: - 300g chicken tenderloins or breast  - 1/2 tsp crushed chilli - 1/2 tsp garlic paste - 1/2 tsp low sodium soy sauce - 1/2 tsp rice wine vinegar (sub for white vinegar or lemon juice) - 20g cornstarch + 1 tsp baking powder - onion powder to taste - oil spray for airfrying Honey Sauce: - 1 tsp sesame oil - 1/2 tsp garlic paste  - 30g honey (about 1.5 tbsp) - 1 tbsp sugar free maple syrup  - 1 tsp soy sauce - 1 tbsp white vinegar - 2 tbsp water + 1 tsp corn starch Fried Rice: - 1/2 tsp sesame oil - 1 tsp garlic paste - 1/2 tsp chilli paste - 150g frozen veggies (peas, carrot and corn mix) - 1 egg - 250g cooked rice (2x rice cups) - 1/2 tbsp low sodium soy - 1 tsp sweetener (I use natvia) - sriracha to taste (optional) - Green onion & sesame seeds for topping 1. Dice the chicken into bite-sized pieces and add to a bowl. Season with garlic paste, crushed chilli, soy sauce, vinegar, and onion powder. 2. Add cornstarch and baking powder. Mix well until chicken is fully coated. 3. Lightly spray with oil and air fry at 200°C for 10–13 minutes, shaking halfway until golden and crisp. 4. In a small non-stick pan, heat sesame oil and garlic paste over low heat. Stir in the honey, sugar-free maple syrup, soy sauce, and vinegar. 5. In a small bowl, mix water and cornstarch until smooth, then pour into the sauce. Stir and simmer for 1–2 minutes until thick and glossy. 6. Once the chicken is cooked, toss it through the honey sauce until fully coated and sticky. Top with sesame seeds. 7. In a large pan or wok, heat sesame oil with garlic and chilli paste. Add the frozen veg and sauté for 2–3 minutes. 8. Push veggies to the side, crack in the egg, scramble it, then mix through. 9. Add cooked rice, soy sauce, sweetener, and sriracha (if using).
