Recipe:                                                                           Ingredients  Crumble -1/2 cup granulated sugar (100g) -3/4 cup all-purpose flour (90g) -6 Tbsp unsalted butter, cold and diced (85g) -pinch of salt Cream Cheese Filling  -8oz cream cheese, softened (226g) -1/4 cup granulated sugar (50g) -2 tsp milk -1 tsp vanilla  -Pinch of salt  Muffins -2 1/2 cups all-purpose flour (325g) (+2 tsp to coat the strawberries) -1 Tbsp baking powder -1/2 tsp salt -1/2 cup unsalted butter, softened (113g) -1 cup granulated sugar (198g) -2 eggs, room temperature  -2 tsp vanilla -1 Tbsp lemon zest  -2/3 cup milk, room temperature (158ml) -1 1/2 cups diced strawberries (about the size of a blueberry) (250g)  -3/4 cup white chocolate chips (128g) Instructions  For the crumble:  1. Stir together flour, sugar, and a pinch of salt.  2. Add 6 tablespoons of cold butter, diced into cubes, and work the butter into the flour mixture with your fingers until a crumbly mixture has formed. Set aside. Place in the refrigerator in the meantime. For the cream cheese filling: 1. In a medium bowl add cream cheese, sugar, milk, vanilla, and a pinch of salt. Mix until combined. 2. Add the filling to a piping bag or ziploc bag and cut the tip off. Set aside. For the muffins: 1. Preheat oven to 425°F and line 2 muffin tins. 2. In a medium bowl whisk together flour, baking powder, and salt. Set aside. 3. In a large bowl beat the butter and sugar until light and fluffy. 4. Add the eggs, lemon zest, and vanilla. Mix until combined. 5. Add the dry ingredients to the creamed mixture alternating with the milk. Mix until just combined. 6. In a small bowl gently toss the diced strawberries with 2 tsp of flour. 7. Add the strawberries and white chocolate chips to the batter. Gently fold into the batter until just combined. 8. Evenly scoop the batter into the muffin liners. Insert the cream cheese piping bag into the center of each muffin, almost to the bottom, and squeeze as you slowly pull upward. Finish with a sprinkle of crumble on top. 9. For regular-sized muffins bake for 5 minutes at 425°F and then reduce temperature to 350°F for about 15-18 minutes.
