Preheat oven & set your oven to 375°F (190°C) and line a baking sheet with parchment paper. 2. In a large mixing bowl, whisk together the spelt flour, baking powder, and salt until well combined. 3. Add the plant-based yogurt to the dry ingredients. Mix until a shaggy dough forms. (If the dough feels too sticky, sprinkle in a bit more spelt flour, one tablespoon at a time, until it becomes manageable.) 4. Transfer the dough to a lightly floured surface. Knead gently for about 1–2 minutes until smooth and elastic. 5. Divide the dough into 4 equal portions. Roll each portion into a rope approximately 6–7 inches long. 6. Join the ends of each rope to form a bagel shape. 7. If desired, lightly brush the tops of the bagels with a plant-based milk (such as almond or soy milk) to help toppings adhere. 8. Sprinkle your chosen toppings over the bagels. 9. Place the bagels on the prepared baking sheet. 10. Bake in the preheated oven for 25–30 minutes, or until the bagels are golden brown and sound hollow when tapped. 11. Remove the bagels from the oven and allow them to cool on a wire rack for at least 15 minutes before slicing.
