@dandanyummyfood: Cold Cucumber and Vermicelli Salad 凉拌黄瓜粉丝 Ingredients: • 8–10 mini cucumbers, cut into thick matchsticks • 2 bundles of vermicelli noodles, cooked and cooled • 1 red mini pepper, diced • 3 garlic cloves, minced • 1 bunch scallions, chopped • 1 tsp salt • 1 tbsp sugar • 2 tbsp light soy sauce • 3 tbsp sesame oil • 3 tbsp vinegar • 3 tbsp homemade chili oil • 1 bunch cilantro, chopped (optional) Instructions: 1. In a large bowl, combine the cucumbers, cooked vermicelli, red pepper, garlic, scallions, salt, sugar, soy sauce, sesame oil, vinegar, and homemade chili oil. Add cilantro if using. 2. Toss everything together until well mixed. 3. Chill in the fridge for 30 minutes to 1 hour. 4. Serve cold—enjoy with rice or anything you like!
