In a pan with oil, sauté red onion until soft. Add garlic and ginger, cook until fragrant. 2. Add cleaned chicken liver, sear until browned. Add liquid seasoning and a splash of water. Simmer until tender. 3. Let cool slightly, then mash or blend to your preferred texture. 4. Mix in calamansi juice to taste. Adjust seasoning as needed.
