Strawberry shortcake cookies🍓🍰✨                                                                                                     Recipe:                                                                          Ingredients Macerated strawberries  -1 1/2 cups diced strawberries  -1 Tbsp sugar Strawberry cookies -2 cups + 2 Tbsp all-purpose flour (255g) -1/4 tsp baking powder -1/2 tsp baking soda -1/2 tsp salt -10 Tbsp unsalted butter, softened (141g) -3/4 cup granulated sugar (150g) -1 Tbsp lemon zest -1 egg, room temperature -1 1/2 tsp vanilla -1/2 cup fresh strawberries, diced (tossed in 1/2 Tbsp flour)  Mascarpone frosting  -8oz mascarpone cheese, cold -2/3 cup heavy whipping cream, cold (158ml) -1 cup powdered sugar (113g) -1 tsp vanilla Instructions  For the macerated strawberries: 1. In a bowl combine strawberries and sugar. Cover and let sit in the refrigerator for at least 30 minutes so the juices get released. For the strawberry cookies: 1. Preheat oven to 350°F and line a baking sheet with parchment paper. 2. Dice the strawberries to about the size of a blueberry. Place them on a napkin-lined plate to absorb excess moisture. Set aside. 3. In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside. 4. In a large bowl add sugar and lemon zest. Use your fingers to rub them together until it looks like wet sand. 5. Add the butter and mix until light and fluffy. 6. Add the egg and vanilla. Mix until combined. 7. Slowly add in the dry ingredients until almost combined. 8. Toss the strawberries in 1/2 tablespoon flour and gently fold in the strawberries until just combined. Don’t let the dough sit too long because the strawberries will start releasing more moisture.  9. Scoop the dough with a 3-tablespoon cookie scoop and place on a baking sheet 2 inches apart. 10. Press down on each cookie dough to flatten the tops. Bake 9-11 minutes. Let the cookies cool before frosting.  For the mascarpone frosting: 1. In a large bowl beat the mascarpone cheese until smooth. 2. Add the heavy whipping cream, powdered sugar, and vanilla. Beat until stiff peaks form.  3. Add to a piping bag. Cut off the tip of the piping bag or use a piping tip (such as a Wilton 2A) and pipe a swirl on top of the cooled cookies. 4. Top with the macerated strawberries. The cookies are best eaten fresh.
