@stephgigliotti28: Homemade Vanilla Extract (4 oz Bottle Size) Ingredients: • 1/2 ounce whole vanilla beans (Madagascar, Tahitian, or Mexican varieties work well) this is 3-4 beans, depending on size • 4 ounces alcohol like vodka, rum, brandy or bourbon (at least 70 proof/ 35% alcohol by volume) Supplies: • 1 clean, dry 4-ounce glass bottle with a tight-fitting lid • Sharp knife or kitchen scissors • Funnel (optional, but helpful for pouring) Instructions: 1. Prep the Vanilla Beans: • Use a sharp knife to slice each vanilla bean lengthwise, leaving about ½ inch at the top intact. This exposes the seeds and allows better infusion. • If needed, cut the beans in half to fit the length of your bottle. 2. Add Vanilla Beans to Bottle: • Place the prepared vanilla beans directly into the 4-ounce glass bottle. 3. Add Alcohol: • Use a funnel to pour 4 ounces of your alcohol of choice into the bottle, fully submerging the beans. 4. Seal and Shake: • Tightly seal the bottle and give it a good shake for about 30 seconds to start the infusion process. 5. Store and Infuse: • Store the bottle in a cool, dark place (like a pantry or cupboard). • Shake the bottle once or twice a week. • Allow the extract to infuse for 4–6 months for a rich, dark vanilla flavor. The longer it sits, the better it gets! Tips: •The FDA recommends 0.5 ounces of vanilla beans per 4 ounces of alcohol, roughly 3-4 whole vanilla beans. If you have 8 ounce bottles use 1 ounce of vanilla bean pods, about 6-8 depending on size. •Label each bottle with the date you started it. •After 6 months, you can strain out the beans and seeds if you prefer a clear extract—or leave them in for continued flavor development. •You can top off with more alcohol as you use it to keep the beans covered and extend the extract’s life. •After removing the bean pods discard them, do not reuse the bean pods in another batch.
