I have *scoured* the internet & not found an easier chicken & dumpling recipe.  Serves 4-5 adults Kid friendly suggestion:  - Serve biscuits (recipe on my site) + baked chicken + mixed veg BASE INGREDIENTS: 2 1/2 lb chicken breast, cut in half lengthways  2 cups chicken or vegetable stock, more if needed 1 tsp sea salt 1/2 tsp fresh ground black pepper  1 tsp smoked or sweet paprika  16 oz frozen mixed vegetables  DUMPLING INGREDIENTS  3 cups (411 gr) all purpose flour 2 tbl corn starch  2 tsp salt 2 tbl baking powder  1 tsp sweet paprika  1 1/2 tbl fresh thyme 4 cloves garlic  1 cup (2 sticks) unsalted butter 1 1/2 cups buttermilk  Egg for brushing METHOD 1. Preheat oven to 350°F/175°C. 2. Place chicken in evenly 9x13” pan. If the chicken is thick, cut it in half length ways.  3. Season chicken with salt, pepper, & paprika. 4. Evenly spread frozen vegetables over the chicken.  5. Pour enough stock over chicken to cover. Use up to 1/4 cup more if not fully covering chicken. 6. Bake for 40 minutes in the middle rack of the oven. 7. While the chicken is baking, make the dumplings. 8. Pour the buttermilk into a glass measuring cup with at least a 2 cup capacity & place in the freezer for 15 minutes. 9. Melt the butter halfway & set aside to cool. 10. Whisk together the flour, salt, baking powder, & paprika in a large bowl & set aside.  11. Mince the garlic & thyme and whisk in to the dry ingredients. 12. Once the buttermilk is fully chilled, slowly pour in the cooled melted butter. Stir with a fork, you should see chunks. 13. Add the wet ingredients to the dry ingredients & mix until fully together. The mixture should be sticky, but not dry. If needed, add more buttermilk 1 tbl at a time or more flour 1 tbl at a time.  14. Pat dough mixture together, & once the chicken has finished its first bake, remove from the oven & increase the temperature to 450°F/230°C 15. Use a 1/4 of a cup scoop to drop the dumplings evenly across the entire dish. Brush with egg wash or buttermilk. 16. Bake 20-25 minutes rotating the dish halfway through.  17. Remove from oven when biscuits are golden brown. Let cool 10 minutes before serving. #dinneratmyplace #chickenanddumplings #foryoupage  @cherylday
