@_bookofelie: @Josh Elkin, @Reach and I Went to Catch Las Vegas inside the Aria Las Vegas per talks recommendations for Caesar Salads and vibes, and it was an absolute smasher. Off rip they brought us an off menu carpaccio that was u like any id have before. I asked chef how we'd order this again, he said just show staff this video 😭😭 so then the Caesar came out right after, and damn...Sugar Snap Peas, Avocado, Sunflower Seeds, Asparagus, Lemon Parmesan Vinaigrette ...truffle croutons. We ate this thing down to the base, can't recommend it enough! Super refreshing, and pairs well with the raw meat 😭😮‍💨 Every last thing you saw us eat I recommend to the moon, including some of the best tasting octopus I've had, herb roasted branzino, truffle mushroom spaghetti (one of my favorite bites of the night), the yuzu-calamansi Brussels. Chef Adrian started blessing us with some dishes that didn't even have names yet, but he brought out this Lobster Pave...probably thousands of layers of individual potatoes, topped with lobster and caviar 😮‍💨😮‍💨😮‍💨 crispy, yet lush on the inside. And just when I thought I couldn't eat more, they didn't let us leave without trying their signature HIT ME dessert (sorry Reach) and the Strawberry Kakagori, one of my favorite desserts I've had this year. It felt like the most powdery, finely pressed shaved ice that when layered on top of each other is almost indistinguishable from cake 🍰 texture. Where yall think we should go next for Caesar salads? 😭 seems like when the Caesar is good, everything else is too ... trying to push this theory 👇🏽👇🏽👇🏽👇🏽
