Prep pork shoulder by rubbing down with a light coating of yellow mustard and then seasoning on all sides with barbecue dry rub. Place a probe in the thickest part of the shoulder and place on the smoker to cook until it reaches 160° internal temperature. Place a second probe in the thickest part of the pork loin. You’re looking for an internal temperature of 147°F.
