Italian Basil Chicken Cutlets with Tomato and Burrata Ingredients: 4 boneless, skinless chicken breasts 1 cup Italian-style breadcrumbs 1/2 cup grated Parmesan cheese 2 large eggs, beaten 1/2 cup all-purpose flour 1/4 cup chopped fresh basil Salt and pepper, to taste 1/4 cup olive oil (for frying) 2 medium ripe tomatoes, diced 1 ball fresh burrata cheese Additional fresh basil leaves, for garnish Directions: Pound chicken breasts to even thickness (about 1/2 inch thick). Season with salt and pepper. Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan. Dredge each chicken breast in flour, then dip in egg, and finally coat in the breadcrumb-Parmesan mixture. Heat olive oil in a large skillet over medium heat. Fry chicken cutlets for 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel–lined plate. In a small bowl, toss diced tomatoes with chopped basil, a pinch of salt, and a drizzle of olive oil. To serve, top each chicken cutlet with a scoop of the tomato-basil mixture and a generous spoonful of burrata. Garnish with additional basil. Serve immediately.
