Sauté until golden. • Add spinach and cook for just 30 seconds until wilted. • Transfer to a blender with Parmesan, a splash of pasta water, and blend until silky smooth. • Cook your pasta al dente, mix in the spinach sauce, and let it simmer for 2 minutes to thicken. • Plate it up and top with extra Parmesan.
