Another must-save recipe, especially if you have no time to make breakfast in the morning!  ✅cookbook approved: Freezer-friendly veggie egg muffins Ingredients: (12 servings)  -8 Eggs -2 cups baby spinach (chopped) -½ cup Cherry tomatoes (sliced) -1-2 bell peppers, diced -1 cup shredded cheese  -2-3 cups Quinoa (cooked) -Choice of seasonings Instructions 1. Preheat oven to 350° and spray large muffin tin with cooking spray.  2. Cook quinoa according to package directions.  3. In a medium bowl, mix the warm quinoa with the cheese to melt the cheese Spoon quinoa mixture into muffin tins (fill ¼ cup) 4. Add spinach, tomatoes and bell pepper on top of quinoa 5. Whisk eggs in bowl and add choice of seasonings. Pour egg mixture directly into muffin tins 6. Bake for 20 minutes or until muffins are set in the middle (you shouldn't be able to see any liquid). 7. Remove from the oven and let cool for 10 minutes. Gently run a knife around the edges to loosen and pop our the muffins. Enjoy warm as is or with hot sauce, avocado, etc. TO REHEAT: Unwrap the muffins if needed, and place on a microwave-safe plate. Reheat gently in the microwave on medium power until hot and warmed through to the center, about 30 seconds (from thawed) or 1 to 2 minutes (from frozen). TO FREEZE: Let the muffins cool completely, then individually wrap them in plastic wrap. Place them in a ziptop bag and freeze for up to 3 months.
