the problem is, you need to also change the flower that you use. any American flower is going to be using genetically modified grains and is horrible. if you want really good pastas and breads that are not bad for you, you have to import your grain

In Canada most bread as of 2023 contains soy lecithin in it now, many cannot have soy and soy is an endocrine disrupter so women especially have alot of issues

If you mill your own flour it doesn’t have all the chemicals like store breads. It’s not gluten it’s the chemicals people have issues with in our foods! Why, did we ever allow the foods with chemicals and stopped using fresh farmed foods??? Time to demand America provide our fresh foods and learn to make it from scratch! Time for accountability and responsibility for what we allow and eat.

Bread actually needs to be a part of everyone’s diet. It just needs to be whole grain sourdough. If you don’t make the bread using mills grain, within 72 hours it’s dead and void of nutrients. People have terrible allergies because we aren’t eating nutrient rich breads anymore.

in the '50s they changed the wheat and that's why some people can't eat gluten.
keep the varieties that we're not changed like Einkorn and I think spelt. non-hybridized not bromated.
