FULL RECIPE BELOW: Cheesy Fiesta Potatoes w/ a Twist 🥔 Now yall don’t come for me, BUT I used to LOVE Taco Bell’s Cheesy Fiesta Potatoes😭😭 They were so bomb to meee😩 So I was like ahhhhh let’s make it at HOME 🥰 Ingredients : • Diced yellow potatoes • Avocado oil • Fresh chopped garlic • Badia Sazón Tropical (to taste) • Badia Complete Seasoning (to taste) • Ground sirloin • Diced tomatoes and green chilies (for beef) • Sliced fresh jalapeños (optional, for topping) Spicy “Sour Cream” • 2 tbsp plain Greek yogurt • Tapatío hot sauce (to taste) • Seasonings of choice to taste Nacho Cheese Sauce • 3 cups freshly shredded cheddar cheese • 1½ tsp cornstarch • 1 (12 oz) can evaporated milk • 2 tsp juice from canned jalapeños (optional) • Salt to taste (to taste) • Garlic powder (to taste) Instructions: 1. Air fry the potatoes: Dice yellow potatoes and toss in avocado oil, minced garlic, and seasonings. Air fry at 400°F until golden and crispy. Shake halfway through. 2. Cook the ground beef: Brown ground sirloin in a pan. Once it’s almost done, add diced tomatoes and green chilies. Season to taste with Badia Sazón Tropical and Complete. Cook until fully done. 3. Nacho Cheese Sauce • In a bowl, toss shredded cheese with the cornstarch. • Heat evaporated milk in a saucepan over medium heat until it starts to simmer. • Remove from heat, and stir in the cheese one handful at a time until fully melted and smooth. • Mix in jalapeño juice, salt, and garlic. Cheesy Fiesta Potato Skillet is an easy dinner recipe the whole family loves! INGREDIENTS 5 small/medium potatoes olive oil + salt, pepper, garlic powder, and paprika (for potatoes) 1 lb ground beef 1/2 tsp salt and pepper 1/4 tsp cayenne 2 tsp chili powder 1 tsp each of cumin, paprika, and dried cilantro 1 tbsp minced garlic 1 1/2 cups white Queso Sour cream Pico de Gallo Fresh cilantro INSTRUCTIONS Peel, wash potatoes, and cut up into cubes. Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part). Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook. Heat a skillet over medium high heat. Add the ground beef to the skillet and cook until browned. Drain any extra grease. Season with salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper. Add minced garlic and stir well. Once the potatoes and ground beef are cooked combine them together in the skillet and pour warmed up Queso over them. Top with fresh cilantro.
