Surprise them with a whole branzino! 🐟🤭 ✨ WHOLE ROASTED BRANZINO ✨ with lemon dill mayo + peppers & onions 🐟🫑🧅 You’ll need: • 1 whole branzino, cleaned and gutted (ask your fishmonger to do this!) • 2 bell peppers, sliced (any color you like) • 2 onions, sliced • Olive oil • ½ cup all-purpose flour • 2 tbsp cornstarch • Salt + pepper to taste Directions: Preheat your oven to 475°F (245°C). Slice the onions and peppers and lay them flat on a parchment-lined baking pan. Drizzle lightly with olive oil and season with salt. Generously coat your branzino with olive oil. In a shallow bowl, mix ½ cup flour with 2 tbsp cornstarch and a pinch of salt. Dip the fish in the flour mixture, then back into a light coat of olive oil. Place the fish directly on top of the veggie bed. Bake for 15–20 minutes, or up to 25 if your fish is larger. Skin should be golden and crisp, and veggies tender. Be mindful of the bones unless you debone before cooking! Lemon Dill Mayo:  • 1 room temp egg • ¾ cup neutral oil (like sunflower or light olive oil) • 1 tbsp fresh lemon juice • 1 tsp lemon zest • 1 small clove garlic (optional) • 1 tsp chopped fresh dill • Salt + pepper to taste In a tall jar or cup, blend everything with an immersion blender until thick and creamy, adding the oil in slowly.  Serve the branzino over the roasted vegetables with a big spoonful of mayo.
