Pat them dry and toss in a bowl with olive oil, salt and pepper to coat. Add 2 tbs olive oil to a large skillet over medium heat, and brown the potatoes for about 4-5 minutes per side or until deep golden brown. Add the butter, thyme, garlic and shallot. Spoon the melted butter over the potatoes. Add the chicken stock and bring to a simmer.
