important note, can't tag them when you're using chats in projects! but you can move the chat out of the project, then tag the custom GPT, then move it back

I never knew this, they are so good at adding new features then keeping them quiet - for the different personas thing, an even easier way of doing this is just set all personas up within a project and give it instructions for them to discuss your requests/ideas amongst themselves before getting back to you, you then see all their deliberations along with their final synthesised advice
