Many believed them to be toxic, cold, and phlegm-inducing, so they were to be avoided. Mushroom Catsup was the preferred condiment, and dozens of recipes exist from the time. This Mushroom Catsup recipe is very simple compared to some from the 17th, 18th, and 19th centuries. Some call for the addition of onions, anchovies, and a variety of herbs and spices. Dr. Kitchener preferred the flavor of the mushroom to dominate, so the only additions are allspice and black peppercorn. Ingredients: 2 pounds mushrooms 1 cup salt (or more) 1 tablespoon black peppercorn ½ tablespoon allspice 6 bay leaves Directions: Clean and remove dirt from approximately 2 pounds of fresh mushrooms and add them to an earthen pot. Crush and break them and cover with approximately 1 cup of salt. You may also add 1 tablespoon of black peppercorn, ½ a tablespoon of allspice, and 6 bay leaves at this time.  IMPORTANT: Allow this mixture to sit for three days covered in a cool, dark location, stirring each day.  After three days, place the earthen pot in a cauldron to create a double-boiler. Simmer gently for at least 2 hours. Remove the pot from the cauldron and allow the contents to cool completely. Strain the mixture through a fine cloth and simmer the liquid until reduced by half. The final product is earthy, savory, and salty. I like to add a splash of apple cider vinegar and use it for dipping.
