Depending on the pan, it’s meant to be on a lower temp, not med-high, or it will burn. Also heating up water + baking soda after helps it lift the burnt bits off without damaging the pan!

I had this same problem. I approached the problem of cleaning rather than why it crisps up. Le Creuset sells a cleaner that works MIRACLES on their products. I have it, small bottle lasts forever

The sand/white color Le Creuset enamel is more for low and slow cooking or braising (searing then cooking with liquid) and the black enamel is for hight heat/searing. I would think from the sound the heat is too high with that pan but can still cook what you want just on more of a medium heat and use more fat than you are now.

1) your burner element is probably just uneven 2) I don’t think enameled cast iron is a replacement for non-stick? 3) put some water in the warm pan as soon as you’re done cooking to loosen the residue 4) a scrub daddy just gets that stuff up for me and if not I add a little Bon Ami.
