@happyandfull: Boursin sausage & veg orzo One pot. ONE POT. Cooks in 20 minutes and it has the most incredible creamy flavour. I packed mine with veggies and tons of protein. I snuck in even more by using bone broth 😉 It’s such a lovely dish and so good when you’re short on time. The whole family will loooove it, including the kiddos. Save this & give it a try!! Ingredients (serves 4-6) 2 cups dry orzo 1 pack chicken sausage 1 zucchini 1 pint of cherry tomatoes 1 garlic & herb Boursin cheese 2 cups chicken bone broth 1 cup water Salt, pepper & garlic powder Directions: 1. Slice sausage into thin rounds 2. Dice zucchini & slice cherry tomatoes in half 3. In a large pot add a splash of oil, chicken sausage and veggies 4. Season with salt, pepper & garlic powder, stir cooking for 5 minutes until veggies soften 5. Push veggies and sausage to the side & add Boursin cheese, orzo & broth 6. Cover and let simmer for 10 minutes 7. Remove cover & add 1/2 cup of water, stir until cheese melts & continue cooking for another 5 minutes while it thickens & water has been absorbed. Add another splash of water if it becomes too thick. Remove from heat once orzo is cooked through 8.
