@hometosoulbakingco: Replying to @GlowingPoe super easy to follow recipe by Twisty Taster on YT. Just follow the steps exactly as she has shown. I used a candy thermometer and it worked just fine. I times this recipe by 6 (so 6x or even 8x would be ideal for a standard 8 inch cake) because she made such a small amount for the example. If you’re making a larger cake than for this I would go up more. I just found out Korean buttercream apparently isn’t the best for holding up in heat and it’s got kind of a greasy texture that some people aren’t fond of so use with your own personal discretion it’s usually used mostly to pipe flowers but not always to decorate a whole cake, something to think about. ☺️ I will leave the recipe ingredients here too: 75g Egg Whites 90g Granulated Sugar 25g Water 250g Salted Butter (use half salted or unsalted if you would prefer to control the saltiness in the recipe) 5g Vanilla Extract 3-4 Food Colouring (I use just a a drop or two of violet to make my frosting white before adding other colors to make them more vibrant. I added my food coloring in after mixing) I can’t find them on TT but if anyone knows their account let me know so I can tag them here! :) Hope you guys enjoy this recipe as much as I do! But if not, there are plenty of buttercreams out there so just keep searching till you find one that works for you.🥰🧡 #buttercream #koreanbuttercream #cakedecorating #vintagecake #vintagecakes #cakesoftiktok
I just discovered this buttercream is mostly used for piping flowers and not whole cake decoration as the frosting can be described as little greasy for some so use your discretion. May be only good to use this frosting for finer details of the cake if imthe texture doesn’t sit right with you.🧡

just a note for colouring the frosting, but you might have already heard of this - you can try taking a little bit of frosting, melting it, and then adding the food dye to that, and mixing it back into the batch.
I might not be able to explain to science perfectly, but it makes it easier for the dye and frosting to emulsify, because your mixing the dye into more liquid fat molecules when it's softer, rather than the fat being a bit more solid at room temperature.
This is also a method some bakers use to get more vibrant reds and blacks with less food dye, you mightve noticed that sometimes it looks like there are tiny specks of dye in the frosting, so this method helps it look like a more cohesive colour.
And for any less experienced bakes that might be reading this, this is also why everyone recommendeds to use gel dye instead of liquid, because with liquid it's like trying to mix water and oil, which is very difficult if you don't use an emulsion blender 🙂🩷

I'd be curious of what the main differences are between this and Swiss meringue? it seems to be pretty similar based on your comparison, but this is mostly comparing it to ABC
