Ingredients (Makes 4 Sandwiches) For the Chicken • 4 boneless, skinless chicken thighs (~5 oz each) • 2 cups (56g) crushed corn flakes • 4 large egg whites (or 2 whole eggs + 2 egg whites) • 2 tbsp cornstarch • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp black pepper • Cooking spray or 2 tbsp avocado oil For the Kimchi Slaw • 1 cup (100g) white cabbage, shredded • 1 cup (100g) purple cabbage, shredded • ½ cup (60g) kimchi, chopped • ½ small red onion, thinly sliced • 2 tbsp Greek yogurt (or light mayo) • 2 tsp rice vinegar • 1 tsp sesame oil • 1 tsp gochujang • ½ tsp salt For the Honey Gochujang Sauce • 2 tbsp honey • 2 tbsp gochujang • 2 tbsp rice vinegar • 1 tbsp soy sauce • 1 tbsp cornstarch • 4 tbsp water For Assembly • 4 low calorie buns (~150 calories each) • 4 tsp light mayo (or Greek yogurt spread) • 4 lettuce leaves Instructions Step 1: Bread the Chicken 1. Pat dry the chicken thighs. 2. In one bowl, whisk the egg whites. 3. In another bowl, mix corn flakes, cornstarch, garlic powder, onion powder, and black pepper. 4. Dip each chicken thigh in the egg whites, then coat thoroughly in the cornflake mixture. Press the breading on firmly. Step 2: Cook the Chicken • Air Fryer: Spray with cooking spray and air fry at 375°F (190°C) for 12-14 minutes, flipping halfway. • Oven: Bake at 400°F (200°C) for 18-20 minutes, flipping halfway. Step 3: Make the Slaw 1. In a bowl, mix Greek yogurt (or mayo), rice vinegar, sesame oil, gochujang, and salt. 2. Add white cabbage, purple cabbage, kimchi, and red onion. Toss until coated. Careful with the mandolin if you use one please! Step 4: Make the Honey Gochujang Sauce 1. In a small pot, mix honey, gochujang, rice vinegar, and soy sauce. 2. In a separate bowl, dissolve cornstarch in water, then add to the sauce. 3. Heat over medium, stirring, until thickened (~1-2 minutes). Step 5: Assemble the Sandwich 1. Spread 1 tsp light mayo (or Greek yogurt) on each bun. 2. Add lettuce, crispy chicken, a spoonful of slaw, and drizzle with the honey gochujang sauce. 3. Top with the bun and enjoy! Nutrition per sandwich With chicken thighs: 540 calories with 45g carbs 55g protein and 14g fat Use chicken breasts for a higher protein alternative!
