This dish is loaded with veggies, and you really can make it your own. Healthy, hearty and comforting.   Yields 8 - 10 servings.  Main ingredients :  - tons of veggies. I used zucchini, squash , cauliflower, plum tomato’s and red onion.  - 1 potato peeled and cut  - 2 cans chickpeas  - 2 cans crushed tomatoes  - 2 tablespoons vegetable bouillon paste  - Parsley or cilantro (I used parsley)  Spices / oils  - 4 tablespoons extra-virgin olive oil - 4 cloves garlic, minced - 1½ teaspoons ground cumin  - 1 teaspoon smoked paprika  - ½ teaspoon ground coriander  - ¼ teaspoon ground turmeric - 2 teaspoons kosher salt, plus more as needed  - ½ teaspoon freshly ground black pepper, plus more as needed  - 2 chiles - Finely grated zest and juice of 1 lemon  In a large pot, heat 3 tablespoons of the oil over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent.  Stir in the garlic, cumin, smoked paprika, coriander, and turmeric and cook until fragrant. Stir in the crushed tomatoes, 1 tablespoon bouillon paste, and 2 cups of water. Bring to a boil, then reduce the heat and simmer for 5 minutes. The consistency should be soupy. Add all your vegetables and potatoes. Stirring occasionally, until the vegetables are cooked, 15 to 20  minutes. Stir in the chickpeas and tomatoes and cook until heated through, about 5 minutes. Remove from the heat and stir in the lemon zest and juice.  Meanwhile, for the couscous, bring 2 cups water to a boil in a large pot. Add the remaining 1 tablespoon of bouillon paste, the remaining 1 tablespoon of oil, and ½ teaspoon salt. Stir in the couscous. Cover tightly, remove from the heat, and let stand until the couscous absorbs the liquid, about 5 minutes. Fluff with a fork and set aside, covered.  Garnish with parsley or cilantro.
