Lemon Grass Chicken Thigh Bowl Lemongrass Chicken Vermicelli Bowl  Chargrilled chicken thigh, marinated in lemongrass, garlic, and fish sauce, served over rice vermicelli noodles. Topped with crisp veggies, fragrant herbs, and a splash of tangy nước chấm. It’s light, flavorful, and packed with lots of flavor. Using Chin-Su original hot sauce, no.1 hot sauce in Vietnam gives the perfect balance of spicy, sweet, savory and tangy flavors. Using Chin-Su fresh anchovies fish sauce.  This gives you a truly Vietnamese taste, giving a robust unami flavor.  You don’t need to add much, just a little and it will enhance your dishes without the fishy smell. - 5 lb chicken thighs  - 1/2 cup water  - 1/4 cup Chin-Su fresh anchovies fish sauce - 3 tbsp Chin-Su original hot sauce  - 3 tbsp oyster sauce  - 3 tbsp neutral oil - 2 tbsp light soy sauce - 2 tbsp brown sugar  - 2 tbsp honey  - 2 tbsp sweet soy sauce  - 2 tbsp cooking wine  - 1 tbsp chicken bouillon  - 1 tbsp dark soy sauce  - 2 tsp black pepper  Paste:  - 1/4 cup lemon grass  - 10-12 garlic cloves - 2 medium shallots - Pinch of salt  Dipping Fish Sauce  - 1 cup warm water  - 1 can coconut soda  - 3/4 cup Chin-Su fresh anchovies fish sauce - 1 cup + 2 tbsp sugar  - 1 1/4 cup vinegar  - 2 limes  - 2 tbsp Chin-Su original hot sauce  Add fresh garlic and Thai Chili when ready to serve.  Instructions:    1. Smash lemon grass, garlic and shallots with a pinch of salt till it becomes a paste.  2. In a big bowl add chicken, lemon grass paste, and all the seasonings listed above,  3. Marinate for at least 30 minutes, ideally overnight.  4. Cook chicken thighs on preferred method. I cooked it on a smoker at 250°F for 30 minutes. Then 450°F for about 10-15 minutes or until the internal temp reaches 165°F. I also like to bump up the heat to 500°F to sear both sides. 5. To plate add vegetables, vermicelli noodles, marinated chicken thighs, pickled vegetables and green onion scallion oil.   6. To make the fish sauce dipping sauce comb in everything together.
