In Toronto, the restaurants charge $22 a bowl and with tax and tip it pushes $28! I can make for about $4 a bowl. 12 cups of water 1 knob ginger diced 8 cloves garlic diced 2 dried shiitake mushrooms 1 onion sliced 4 green onions 10 pieces of pork neck bone 1 tablespoon fish sauce 1/4 cup perilla seed powder 3 tablespoons gochukaru 1 tablespoon gochujang 2 tablespoons of Korean miso paste 4 medium sized potatoes 8 large napa cabbage leaves 8 perilla leaves Sesame seeds Salt to taste Boil the pork neck bones and remove the blood and scum. Dump the dirty water and wash your bones. Add clean water and dump all the ingredients into the pot and simmer for 1 hour. Remove the potatoes once cooked (about 30 minutes) and the Napa cabbage after 15 minutes. I had to layer it in because my pot wasn’t big enough but just use a bigger pot.
