For the marinade - combine 300ml Buttermilk  1 tsp each of the following - paprika, garlic granules, onion granules.  1 tbsp Cajun seasoning and smoked paprika  1/2 tsp Salt and ground black pepper 20ml Dill pickle juice  1 tbsp Mustard  For the coating - combine  1 1/2 cups Plain flour 1/2 cup Potato starch  1 tsp Baking powder 1 tsp each of the following - dried oregano, dried thyme, smoked paprika, garlic granules, onion granules 3 tbsp Cajun seasoning  2 tsp Chicken stock powder  Method  Step 1 - Prep the chicken. In a large bowl, add all of the ingredients for the marinade and stir to combine! Add the chicken pieces to the bowl and let it marinate for at least 3 hours. Remove from the refrigerator 30 minutes prior to cooking  Step 2 -  In separate bowl, combine all of the ingredients for the coating. Place a piece of chicken into the dry mix and toss to coat well. Now place it on a rack or plate. Continue with the remaining pieces. Step 3 - In a large saucepan/ fryer, on high heat, add enough oil for frying (1 litre does the job). Once the oil reaches 175C/ 350F, place in a piece of chicken, it should sizzle, now add more pieces, making sure not to over crowd the pan. Cook for 6-7 minutes on each side. Do this in batches. Place on a rack or paper towels to drain excess oil. Use a meat thermometer to make sure the chicken is cooked through (internal temperature 75C/165F). #friedchicken #cajun #EasyRecipes #fyp #fromscratch
