@thebakermama: A Crispy Leftover Fried Rice Waffle is the best way to enjoy leftover fried rice! 🧇🍳😋 It's so delicious, especially when topped with a runny egg, sriracha and some green onions. 🙌 RECIPE BELOW! ⬇️ Ingredients: 1 cup leftover fried rice 1 large egg, beaten 1 teaspoon soy sauce Toppings: fried egg sriracha chopped green onions Instructions: 1. Preheat your waffle maker. I use our round waffle maker and it makes one (6.5-inch wide) waffle. 2. In a bowl, stir together leftover fried rice, beaten egg and soy sauce until well combined. 3. Spray the heated waffle iron on both sides with non-stick spray. 4. Spread the rice mixture evenly on the bottom of iron, covering it completely, if possible. This will depend on the size of your waffle maker. 5. Close the waffle maker and let it cook for about 5 minutes or until the rice is browned and of desired crispiness. The rice will pop as it cooks, so be careful opening up the waffle maker as rice might pop out. 6. Top the crispy rice waffle with a runny fried egg, a drizzle of sriracha and some chopped green onions for enjoying.
