Durban Mutton Curry | Durban Curries Durban Style Mutton Curry (with extra gravy) 1 – 1.5kg mutton cut into bite sized pieces 3 potatoes, halved 1 onion, finely diced 2 cinnamon sticks 1 star anise 4 elachi pods 2 bay leaves 2 sprigs curry leaves 2 black elachi A few cloves 2 tbsp Kashmiri masala 1 tbsp wet leaf masala 1 tbsp Rombo Rossi Masala 1/2 tsp roasted and ground soomph/fennel seeds 1 tsp turmeric 1 tsp Kashmiri chilli powder mixed with a little water to make a paste. 3/4 tbsp Garam Masala 1 tsp dhaniya/jeera powder 2 jam/Roma tomatoes, puréed 1 tbsp garlic and ginger paste or green masala 2-3 cloves of fresh garlic, smashed 1/4 cup oil - Add oil to to pot on medium heat, next add the onions, curry leaves and whole spices, fry until translucent then add the Green masala or garlic/ginger and garlic paste and stir for 30 seconds to a minute. Add the masalas and fry for a minute - Add the mutton, stir to coat the lamb with the spices, add the tomatoes and salt give it another stir. Allow to cook. Once the tomatoes are cooked add water and allow the mutton to cook, too me 1.5 hours. Then add the potatoes but before the oil settles, switch off the heat – allow it to stand and develop a beautiful gravy, once cooked garnish with chopped curry leaves and dhaniya.
