Zucchini Parmigiana | Light, Cheesy, and Packed with Layers of Comfort This lighter version of the classic Parmigiana swaps eggplant for thinly sliced zucchini — layered with mozzarella, ham, and finished with a golden Parmesan crust. It’s quick to assemble and perfect warm or cold. Ingredients (Serves 4–5): • 5 zucchini • 170g mozzarella • 300g ham • Parmesan cheese to finish • Salt to taste • Extra virgin olive oil Instructions: Slice the zucchini thinly using a mandolin or knife (make sure all slices are even). Slice the mozzarella as well. Grease a baking tray with extra virgin olive oil. Start layering: zucchini, salt, mozzarella, ham — repeat.
