Prep pork shoulder by rubbing down with a light coating of yellow mustard and then seasoning on all sides with barbecue dry rub. Place a probe in the thickest part of the shoulder and place on the smoker to cook until it reaches 160° internal temperature. Use the ThermoPro app to monitor the temperature of the meats while cooking. 2. Once the pork shoulder has reached 160 bring it inside and place it in a foil half pan, brush with liquid butter and season with a light coating of additional dry rub, then pour half cup of vinegar bbq sauce into the pan and cover with a layer of parchment paper and foil leave a hole in the top for the probe to stick out. Continue cooking until it reaches an internal temperature of 203°F and feels tender. Then you can remove it from the grill and let it rest. 3. Pork loin should be rubbed down with olive oil and then seasoned generously with salt, pepper and garlic and placed on the smoker at the same time you wrap the pork shoulder. Place a second probe in the thickest part of the pork loin. You’re looking for an internal temperature of 147°F.
