I’m not a trainer, but I did grow up in a strict Ballet world. I would guess the small muscle reactions to stress. And also the brain body connection. Putting the body in odd balance, places challenges to the brain to connect to balance, heightened awareness to unexpected balance disruptions

So the balancing while doing squats works on your stabilizer muscles, which are a group of smaller muscles that are rarely targeted or trained during training. stabilizer muscles help with balance, and you can train them to make yourself very efficient at balancing.

You weren’t doing it the same way she did. She was actually slightly leaning back so the barbell was hard against the rig so when she went down it slid down it. Because of that she didn’t need to balance her self the same as you did which is why you were shaking compared to her.
