One of my go to weeknight meals 😄 Ingredients: -1 lb ground chicken -1 yellow onion, diced -1 bell pepper, diced -1 head of broccoli, cut into small pieces -4 cloves garlic, minced -handful of shredded carrots -1 head of lettuce, separated (I use romaine, butter, or iceberg) -salt and pepper to taste -green onion, for garnish -2 tbsp neutral oil (I use olive or avocado oil) Filling Sauce Ingredients: - 4 ish tbsp soy sauce - 1 ish tbsp oyster sauce - Spoonful of garlic chili sauce - 2 ish tsp ponzu - 3 cloves of minced garlic - 2 ish tbsp chopped green onion or chives - 1 tsp sesame oil - 1 tbsp rice wine vinegar - 1 tbsp honey - dash of sriracha  - little bit of cracked black pepper  Instructions: 1. Start by making your sauce. To a bowl, add all ingredients listed above under “Filling Sauce Ingredients.” Stir until well combined and set aside.   2. Heat up 1 tbsp oil in your pan over medium/high heat.  Add your ground chicken and cook until done, stirring frequently to ensure everything gets cooked. I seasoned with salt, pepper, onion powder, garlic powder. Remove from pan and set aside. 3. In that same pan, add a little more oil and sauté 1 diced onion and 1 diced bell pepper for a few minutes before adding in your broccoli. Sauté for about 5 minutes, stirring frequently.  4.  Add in 3-4 cloves of fresh garlic and sauté for another minute or so. 5. Add in a few handfuls of shredded carrots. Cook for a few minutes before adding back in your chicken. 6. Add in your sauce. Mix it up, cover for a few minutes, and you are ready to serve. 7. I like to use romaine or iceberg, but you can use any lettuce you like. I serve with jasmine rice and spicy edamame.
