SHOESTRING ONION RINGS (GF / DF) ✨ I like my onion rings thin and crispy, and these absolutely did not disappoint. The crunchiness of the rice flour coating is the perfect match for the sweet and savory onion after it is fried. Finish with some flaky sea salt and you are good to go! Toss well and allow onions to soak for 15 minutes. Heat oil to 375°F in a large, heavy bottom pot over medium heat.  Add 1 ½ cups rice flour, paprika, garlic powder and salt to a large bowl and whisk to combine.  Transfer soaked onions into the bowl with your flour then scoop ¼ cup of the milk mixture and pour it into the bowl with your onions and flour. Toss well and you will see that your mixture kind of clumps and doesn’t adhere evenly to the onion.  Follow up with another coat of ½ cup rice flour and toss again. Your onions should be coated in flour with some clumps but the exterior of the onions should look dry, if they’re still wet you should sprinkle on more rice flour, as needed.  You may need to separate the onions with your hands to prevent them from getting tangled and sticking together in the oil. Once oil hits 375°F, add half of the onions to the hot oil and fry until they are golden brown and crispy, about 6-8 minutes. Transfer to a cooling rack or paper towel lined plate and sprinkle with flaky sea salt immediately.
