@chefjjskitchen: Lebanese Mansaf (المنسف اللبناني) @canarybasmati Ingredients: - 2 kgs of lamb shanks - 2 cups of @canarybasmati - 2 onions - 500 grams minced lamb - 100 grams pine nuts - salt & pepper - 3 bay leaves - 2 sticks of cinnamon - 2 cloves - 4 cardamom pods - 5 peppercorns - 8-9 cups of water - 4 tbsps ghee - 2 tbsps flour - 1 tbsp seven spice - 1 tsp cinnamon powder - start by searing the salted lamb shanks in a pot then add the aromatics. The water and let them fully cook for about 2 hours or till super tender. - strain the stock and broil the shanks in the oven. - wash and soak 2 cups of @canarybasmati and set it aside. - saute a diced onion in a drizzle of ghee with the mince then add the rice. Salt. Pepper the seven spice and the cinnamon powder. - add 3 cups of the stock to the rice or till it’s about a centimeter above the rice. Once it boils drop the heat to a simmer cover and it cook for 20 minutes. - toast 2 tbsps of flour then add a tbsp of ghee to it while mixing. Gradually add stock to it while whisking till you get a smooth and creamy sauce. - pour the rice on a serving plate. top it with the shanks.
