Biggest pet peeve of all time: getting a slice of “lemon cake” that barely has a hint of lemon (and it’s often JUST in the icing) 🖐🏼😑  * 250g all-purpose flour * 2 teaspoons baking powder * ¼ teaspoon salt * 150g salted butter, at room temperature * 240g granulated sugar * 3 eggs, at room temperature * 45ml lemon juice + 25ml lime juice, mixed (plus extra*) * Finely grated zest of 1 lemon and 1 lime * 150ml whole milk  * * *Plus an extra 20ml lemon + lime juice for brushing over the cake  Icing: * 150g icing sugar * 30ml mixed lemon + lime juice  Preheat oven to 180C. Butter and flour a 9x13 pan and set it aside. Juice the citrus and stir the juices together. Whisk together the flour, baking powder and salt, and reserve. In another bowl, add the sugar and lemon / lime zest. Rub it together between your fingers for 1-2 minutes to release the oils in the zest.  With an electric mixer, beat butter and sugar until pale and fluffy, 4-5 minutes.  With the mixer on low, add the eggs one at a time, mixing well after each addition. Add lemon / lime juice and mix to combine. It might curdle, but don’t worry!  Add half of dry ingredients, and mix just until incorporated. Then add the milk and again, stir to combine. Add the rest of the dry ingredients and mix one last time. Be careful not to over mix the batter at this point.  Bake for 30-35 min  Use the reserved citrus juice to brush over the hot cake, then allow it to cool for 15 min before mixing more lemon juice and icing sugar to make the glaze and pour it over the warm cake.
