@ddev70: Chicken in Cheesy Alfredo Three-Cheese Linguine Sauce Ingredients: 2 large boneless, skinless chicken breasts (sliced in half lengthwise for thinner cutlets) 1 tbsp olive oil 1 tbsp unsalted butter 1 tsp Cajun seasoning 1/2 tsp Italian seasoning 1/2 tsp garlic powder Salt and pepper, to taste 2 tbsp unsalted butter 4 cloves garlic, minced 1 cup heavy cream 3/4 cup chicken broth (low sodium) 1 cup shredded mozzarella cheese 1/2 cup grated Parmesan cheese 1/2 cup sharp cheddar cheese 1/4 tsp smoked paprika (optional) Salt and black pepper, to taste 8 oz Linguine Salt for boiling water 1/4 cup reserved pasta water (optional) Fresh parsley, chopped (for garnish) Directions: 1. Bring a large pot of salted water to a boil. Add the linguine and cook until al dente. Drain and set aside. Reserve about 1/4 cup of the pasta water in case the sauce needs thinning later. 2. Season the chicken cutlets with Cajun seasoning, Italian seasoning, garlic powder, salt, and pepper on both sides. 3. In a large skillet, heat the olive oil and 1 tbsp butter over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes per side until golden and cooked through. Remove the chicken and set aside. 4. In the same skillet, melt 2 tbsp butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, but not browned. 5. Pour in the chicken broth and heavy cream. Stir and bring to a gentle simmer. Let it cook for 2–3 minutes to warm through. 6. Lower the heat and stir in mozzarella, Parmesan, and cheddar cheese. Stir constantly until the sauce becomes thick, creamy, and smooth. Add smoked paprika if using, and season with salt and black pepper to taste. Add a splash of the reserved pasta water if the sauce is too thick. 7. Add the cooked linguine to the skillet and toss until fully coated in the three-cheese Alfredo sauce. 8. Place the cooked chicken on top of the cheesy linguine. Spoon some sauce over the chicken, then sprinkle extra mozzarella or cheddar on top. Cover the skillet for 1–2 minutes until the cheese melts visibly over the chicken. 9.
