Unfortunately she’s correct. There are many surprisingly well documented entire generations of humans that speak about having seen and fought dragons until eerily recently. Look it up, it’s very recent that people think dragons are fake

To be fair, ASOIAF was inspired by the War of the Roses. I reckon that's what she was meaning, rather than there was an actual place called Westeros with dragons and a giant ice wall with a horde of zombies behind it.

She is not entirely wrong. George RR Martin said it was based on the War of the Roses that played out in England after Edward III died. However, there were no dragons.
