@nelnourish: ITS GRILLING SEASON BABY!!! 🤟🏿🍑 obsesseddddd with this salad, recipe is below 💐 AD - link in bio 4 my fav knives 🔪 Pearl Coucous - 1-2 tbsp olive oil - 1 cup pearl coucous - 1.5 cups lightly slated water - 1/2 a lemon's juice - more salt & pepper, to taste Dressing - 1/2 a lemon's juice - 1/2 tbsp grainy mustard - 1/2 tbsp dijon mustard - 3 tbsp apple cider vinegar - 2 tsp of honey - 1-2 tbsp balsamic glaze - 1/2 cup olive oil - salt & pepper, to taste Chicken Marinade - 2 chicken breasts, butterflied & cut in 1/2 lengthwise - 1/2 cup salad dressing - 1 tbsp olive oil - 1 tsp cumin - 2 tsp garlic powder (or fresh garlic) - 1 tsp chillli flakes - 1 tsp dried thyme - 1/2 tsp salt Salad - coucous from above - 2 handfuls arugla - 2 mini cucumbers, diced - 2 peaches, sliced in 1/8ths & grilled - handful of blackberries, sliced in 1/2 - 1.5-2 tbsp (20ish leaves) fresh mint, finely chopped - 1/3 cup pistacios, coarsley chopped My recommended order of steps: In a bowl, add dressing ingredients and drizzle olive oil while whisking vigorously. Taste & adjust to your liking. Pour 1/2 cup of dressing in a bowl with your chicken and its other marinade ingredients. Cover and marinade at room temp for 30min or in the fridge for up to 12hr. In a pot, heat olive oil over med-high heat. Add pearl coucous and toast for 1-3 min until lightly golden stirring constantly. Lower heat and add water and a pinch off salt, bring to a boil then lower heat to simmer for 14 min covered. Once done, season with salt/pepper & transfer to a bowl to cool. Preheat a oven top grill on heat heat, add a drixxle of neutral heat and add chicken breasts, top side down. For a cross hatch: place chicken on grill for 1-2 min at a 1'oclock direction then turn to an 11'o clock direction, flip and repeat. Cooking time in total is based on thickness of chicken (hence why cutting in 1/2 and flattening is important). Allow chicken to rest, cut right before platint to retain it's juices! Add sliced peaches to the grill over med heat again (I like adding it after chicken, adds flavour) for 3 minute until grill marks forms. Add salad dressing to couscous with cucmbers, arugula, blackberries, & mint.
