Prawn Green Pesto Pasta Ingredients - 260–280 g pasta (e.g. linguine or spaghetti) - 200 g Argentine prawns (peeled and deveined) - 150 g green beans - 1 small shallot, finely chopped - 1 small garlic clove, finely chopped - Salt - Olive oil - Fresh basil leaves (for garnish) - Optional: a squeeze of lemon juice For the pesto - 1 small garlic clove, halved - 30 g fresh basil leaves - 30 g grated Parmesan - 20 g toasted pine nuts - 50 ml olive oil - Salt (to taste) Instructions First, prepare the pesto: crush the halved garlic clove with a pinch of salt in a mortar. Gradually add basil leaves and continue grinding. Add toasted pine nuts, then grated Parmesan. Slowly incorporate olive oil until a smooth pesto forms. Set aside. Second, bring a pot of salted water to a boil. Blanch the green beans for 3 to 4 minutes until tender and crisp. Remove and set aside. Third, heat olive oil in a pan. Sear the prawns until lightly browned and just cooked through. Remove from the pan. Use high quality Argentine prawns from responsible sources, either sustainably wild caught or farmed under good conditions. Fourth, in the same pan, sauté chopped shallot and garlic until soft. Add the blanched green beans and toss briefly. Fifth, cook the pasta in salted water until just under al dente. Reserve some pasta water, then drain the pasta. Sixth, transfer the pasta to the pan with the beans. Add a splash of the reserved pasta water and combine over low heat. Seventh, add the prawns back in, then remove the pan from the heat. Stir in the pesto until everything is well coated.
