Marble Cake with Chocolate Almond Glaze Ingredients: For the Cake: 1 2/3 cups all-purpose flour 1 cup granulated sugar 1 tablespoon vanilla bean paste 3 large eggs, room temperature 2 tsp baking powder 1/3 cup buttermilk, room temperature 2 tbsp Greek yogurt or sour cream, room temperature 3/4 cup unsalted butter, melted Pinch of salt 1/3 cup cocoa powder 1/4 cup boiling water For the Chocolate Almond Glaze: 1/2 cup semi-sweet chocolate 1/2 cup unsweetened heavy whipping cream 1 tbsp butter 1/2 tsp vanilla extract 1 cup almonds, chopped Method: Preheat the oven to 350°F (180°C). Line a 9x5-inch loaf pan with parchment paper or aluminum foil, leaving some overhang for easy removal. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, combine the sugar and eggs. Whisk for about 3-4 minutes, until pale in color. Add the melted butter to the bowl and whisk for an additional 1-2 minutes, until combined. Add vanilla bean paste. Stir in the buttermilk and sour cream. Gradually add the flour mixture to the wet ingredients and mix until just combined with a spatula. In a small bowl, add cocoa powder and pour in boiling water. Mix until combined. Let it come to room temperature. Divide 1/3 of the cake batter into a separate bowl. Add the cocoa powder mixture to the separated batter and mix until just combined; do not overmix. Pour half of the white batter into the prepared loaf pan. Top with the cocoa batter, then pour the remaining white batter on top. Use a knife or spatula to create a marbled effect by gently swirling the batters together. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. In a saucepan, heat the heavy whipping cream over low heat until it starts to simmer. Remove from heat and add the semi-sweet chocolate. Let it sit for 1-2 minutes, then stir until smooth. Add butter and vanilla extract, almonds , stirring until combined.
