My new obsession 🥯 These bagels are made with 2 key ingredients - tofu and flour. Save a bit of tofu and easily transform it into cream cheese! If you want to introduce another high protein savory breakfast recipe to your rotation, try these bagels. I am currently in Dubai DREAMING of them they will be the first thing I eat when I get home 🤤 Here’s how to make ⬇️ tofu: 1 block extra firm tofu 1-4 tbsp water Flour: 1-2 cups bread flour 2 tsp baking powder 1 tsp sea salt Cream cheese: 1/2 cup blended tofu 1 tsp apple cider vinegar 1/4 tsp sea salt 2 tsp liquid coconut oil optional scoop of protein - the taste of protein is definitely prevalent, if that bothers you just leave it out. if you’re really wanting to increase your protein intake, add a scoop as well as more apple cider vinegar and a mix in like sundried tomatoes or green onion to try and detract from the taste. 1️⃣ Add tofu to your blender and blend using a tamper. If you’re not able to get it going, add water by the tbsp (try not to surpass 4 tbsp or it’ll be too runny.) Blend until smooth and creamy. 2️⃣ Scoop out 1/2 cup of the blended tofu, that will be used for the tofu cream cheese. Add to a mixing bowl and stir in the remaining cream cheese ingredients. Place in a small tupperware and keep stored in the fridge to firm up while you prep the bagels. 3️⃣ Mix dry ingredients then gradually pour in tofu mixture. Gradually add more flour until a nice dough forms. 4️⃣ Knead ingredients together on a floured surface then let rest for 15 minutes. 5️⃣ Cut into 6 pieces for smaller bagels, 4 for larger bagels. Roll into ropes - the smaller the rope, the thicker the bagel. The longer the rope, the thinner the bagel. 6️⃣ Add baking soda to a pot of water. Boil bagels about 30 seconds each side. 7️⃣ Arrange on a parchment lined greased baking sheet. Spray each bagel with avocado oil spray and add toppings of choice. 8️⃣ Bake at 450 for 25 minutes on the middle rack. After 10 minutes of baking, reduce to 425 to avoid the tops burning too much. 9️⃣ Cut open and slather with cream cheese.
