@brennan.kai: BACKYARD MANGO MUFFINS 🥭🧁🙂↔️ As always, I had a bunch of ripe mangoes I needed to use up, so this time around, I made mango muffins… they were so good I had to share! Sweet, soft, spiced with cardamom, and topped with chopped cashews for a little crunch. I brought them to a hang and all my friends were obsessed.
As always, I’m still trying to find new ways to use the abundance of FREE FRUIT growing in my own backyard instead of letting it go to waste, and these are officially going in the mango recipe rotation 🤍
Vegan Mango Muffins (makes 12)
2 1/2 cups flour (I used half oat, half all-purpose)
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cardamom
1/2 cup sugar
2 cups mango purée
6 tbsp coconut oil
1 tsp vanilla extract
1 tsp apple cider vinegar
1/2 cup raw cashews, roughly chopped
Mix dry ingredients, stir in the wet, then fold in cashews. Scoop into a lined muffin tin and bake at 375°F for 25 minutes, or until golden and set.
