FRENCH MACARONS It's taken me while to perfect making macarons - this recipe is the one!  Dainty, delicate and delicious - do give it a try!  RECIPE  Ingredients: Egg white from 1 large egg (room temperature) 46g almond flour 43g icing sugar  30g granulated sugar  ¼ tsp vanilla essence  ¼ tsp vinegar  Method 1. Add the almond flour and icing sugar to a food processor process for a few seconds. Then sieve into a bowl, discarding any large pieces left in the sieve. Set aside.  2. Add the egg white to a bowl and whisk until foamy. 3. Add the granulated sugar in 3 parts. Then add the vinegar, vanilla and food colour. 4. Continue to whisk until stiff peaks. 5. Add the almond sugar mixture in parts, slowly folding in until its all incorporated.  6. If the mixture is thick, keep folding and pressing some of the mixture on the side of the bowl to break up some of the bubbles (as seen in the video). 7. You should be able to make a figure 8 when the mixture drops from the spatula. That indicates that the consistency is ready for piping. 8. Add the mixture to a piping bag and pipe onto a macaron baking tray. I usually put butter and flour on the tray to ensure no sticking.  9. Drop the tray from about 15cm height and then rotate and do the same. This will get rid of any air bubbles. 10. Leave to sit at room temperature for about 45 minutes.  11. Place in the oven at 150°C for 12-15 minutes. 12. Leave to cool before removing from the tray. 13. Fill with buttercream, fresh cream, ganache, fruit compote, lemon curd - lots of possibilities! (I filled mine with French buttercream, coloured purple). 14. Put in an airtight container and put in the fridge. Tastes best the second day, after its had time to bloom.
